With the onset of 80 degree days, every parent, (or person, for that matter) needs to be considering emergency provisions. That being, something cold and refreshing, to take your mind off of whatever it is that your are are all worked up over. Around here, we prefer our frozen treats to be of the non store bought variety. Not so much because of their corn syrupiness (although, that doesn't help), but more so, because they are kinda boring. So, we make our own. The flavors in this particular creation, were a hit with everyone, and definitely not something you are going to find in the freezer case. A touch sweet, a little bit zesty, pretty much perfect.
makes 6 - 8 popsicles (recipe adapted from the kitchn's watermelon popsicle)
- 3 1/2 cups fresh watermelon
- 1/4 cup grated or thinly sliced radish
- 2 tablespoons lime juice
- 1 tablespoon honey
Place all ingredients in a blender and process until smooth. Fill popsicle molds. If using your own sticks, wait until partially frozen. Freeze overnight and enjoy!
