Good morning! We are back! We had a productive weekend that included more planting in the garden, a few small adventures with the boys, and a night entirely to ourselves. We always enjoy our date nights together, but I think I especially look forward to the morning after. A quiet, leisurely breakfast for two, with grown up food just for mom and dad. This recipe was born from that idea. It is pretty straightforward and easy to put together, but the flavor combination is a bit more fancy than our typical breakfast fare. Less time in the kitchen means more time to linger at the table. Always a good thing.
for the toast:
- 6-8 slices good quality bread. this can be white, brioche, french etc.
- 1 cup brown sugar
- 1/2 cup fresh orange juice, divided
- 1 1/2 cups whole milk
- pinch of cinnamon
- 1 teaspoon vanilla
- pinch of salt
- 3 eggs, beaten
for the berries:
- 1 quart of blackberries
- 1/4 cup granulated sugar
- 1/4 fresh orange juice
additional ingredients:
- whipped goat cheese, 3 ounces
- prosciutto slices, 4-6
Preheat oven to 350 degrees.
Place prosciutto on a cookie sheet and bake in oven for 10- 15 minutes, or until crispy. Remove and set aside.
Combine 1/4 cup orange juice, sugar and berries in a large sauce pan. Cook over medium heat until berries give off their juice and sugar is dissolved. About 10 minutes. Set aside.
Heat a griddle to 350 degrees.
In a large bowl, combine 1/4 cup orange juice, milk, cinnamon, salt, sugar and eggs. Whisk until well combined. Dip bread and allow to soak for a minute. Place on griddle and cook until brown on both sides, and cooked through ( about 2 minutes per side)
Make your sandwich. Spread whipped goat cheese on toast, top with berries, prosciutto and remaining piece of toast. Enjoy!
