chocolate + caramel + walnut cookies

Imagine a brownie and a chocolate chip cookie had sex.  You would have these cookies.  What more do you need to know?

Chocolate + Caramel + Walnut Cookies  
>> 1 stick of butter  
>> 1/2 cup brown sugar 
>> 1/2 cup white sugar 
>> 1 egg 
>> 1 1/4 cup flour 
>> 2 tablespoons cocoa powder 
>> 1/2 teaspoon baking soda 
>> 1/2 teaspoon salt 
>> 1/2 cup walnuts, chopped (optional) ditch 'em if you don't like nuts
>>  6 individually wrapped soft caramels, cut into chocolate chip sized pieces

Preheat oven to 300 degrees.

Cream butter and add sugars.  Beat until light and fluffy.
Add egg and beat until well combined.
 In separate bowl, combine flour, baking soda, salt and cocoa powder.  Whisk together.
Add to wet ingredients mix on low until just combined.
Add caramel and walnuts, if using. Again, mix on low until just combined.
Line two cookie sheets with parchment paper.
For larger cookies, scoop 2 tablespoon balls, roughly  8 cookies per sheet pan. Bake for about 18 minutes.
For smaller cookies, 1 tablespoon scoops for 12-15 minutes.
Cool on cookie sheet for five minutes so the cookies finish cooking and set up.  Repeat with any remaining dough.
