Mango + Strawberry Jell-o Shots // Triple Sec Whipped Cream

 Sweet Jello, Tis of thee. Sweet jiggly vodka drink. Of thee I sing.

     Sorry, just had to get that out of our system. Seriously though, Jello shots are something we really want to like, but they always kind of fall short. Today seemed like the perfect day to try to improve upon this trashy classic. Mission accomplished. Careful. Fireworks are still a long way away.

 Mango + Strawberry Jell-o shots

2- 12 ounce cans of mango nectar // 1- 12 ounce can of strawberry nectar // 12 ounce sparkling water (tap is also fine) // 4 tablespoons sugar // 4 tablespoons lemon juice // 2 packets unflavored gelatin // 2/3 cup vodka

Combine nectars and water in a large pitcher or measuring cup.  Stir to combine.  Pour two cups of the juice mixture into a medium sized bowl, sprinkle it with the gelatin and let it soften for aproximately 10 minutes.

In a medium saucepan, heat two cups of juice and sugar.  Bring to a simmer and remove from heat.  Stir to dissolve sugar.  Add remaining 2 cups of juice, vodka and lemon juice.  Pour into shot papers?? (not sure what to call them)  Chill overnight or until set.

Triple Sec Whipped Cream 
 **this is optional.

 1/2 Pint heavy cream //1 Tablespoon Triple Sec //1/4 cup powdered sugar

  In a stand mixer combine the heavy cream, Triple Sec and powdered sugar. Whip on low for about 30 seconds. Increase to high and whip until soft peaks form. (don’t over mix or it will become butter.  If this does happen, add a bit more cream and mix until cream loosens up.)
