Here's a quick little snack that utilizes yet another piece of produce that we cannot get enough of right now, Peaches. There really isn't much to say, beyond get this while you can. I know you can sense the recurring theme here, but if not, I will spell it out. Peaches are only good for a short time. Like when they are in season. So, you should eat lots of them. (Broken record, I know) You should also not fool around with them to much and add all kinds of crap that covers up how awesome they are. Let us help.

make as much or as little as you like. this recipe is great for a quick snack for yourself or an appetizer for a crowd.
- good quality white bread, sliced
- ripe peaches, sliced
- mascarpone cheese
- basil and mint leaves
- habanero infused honey (recipe below)
to make habanero infused honey:
- 1/2 cup organic honey
- 1-2 habaneros, thinly sliced
In a double boiler, over medium-low heat, warm honey. Add habaneros and cook for five minutes. Turn off heat but let the bowl with the honey cool. Strain out habaneros and pour into clean jar with a tight fitting lid.
Toast bread until golden brown. Spread with mascarpone, top with ripe peaches, and drizzle with the honey. Top with fresh basil and mint.
